After 8 hours of a netball tournament today with hot sunshine (unforecast) with 5 mins of torrential rain in the middle (also unforecast 🤦🏻♀️) was too tired to do anything fancy, so easy dinner - jacket potatoes (from a 2.5kg bag of Maris Piper) stuffed with cheddar, butter and leftover diced ham from the freezer from a gammon used a couple of weeks ago, plus a tin of beans.
All from Aldi, total price about £3.10 so 4 of us fed for 76p each.
Posh restaurants call them potato skins with various fillings, I’m also thinking of doing them the same, either bacon & cheese, or tomato & spicy veg, served with guacamole & lettuce yum, you’ve got it right.
