Meatballs and spaghetti recipe! used the Asda just essentials sausages (£1.21)

My 2 year old is such a big lover of meatballs and spaghetti. I usually make my own sauces but today I’m in a bit of a rush and gotta fast from 3pm. So sausage meatballs and spaghetti for dinner 🤤. I seen it on this group I think. I used the Asda just essentials sausages (£1.21) defrosted them, took the skin of them and made them into balls. Depending how big you want them I got 3-4 balls per sausage. I browned them off in frying pad with a bit of fry light, I did the same with onions (2) and pepper (1) also added garlic granules. Popped them in pan after with 2 jars of pasta sauce (Sainsbury’s 39p each) let that bubble away for about an hour. Cooked spaghetti with 2 chicken stocks cubes in water to give flavour (such a game changer). Fed 3 adults & 1 toddler and enough left to tub up and freeze 😍. Definitely gonna Make this meal again 😋.

Pack lunch idea with money saving tips! Chicken Cesar wrap and Cesar salad, veg and dip

Another pack lunch idea with a few money saving tips. Chicken Cesar wrap and Cesar salad, veg and dip, fruit and yoghurt and a Barny bear cake. I buy wonky fruit and veg, reduced too where possible. It does work out so much cheaper and it doesn’t matter what it looks like. Cooking chicken and shredding it yourself is cheaper and healthier too. I could save more by baking their dessert myself too but I’m still recovering from having them home for the 6 weeks holiday 😂😂😂 I used a sauce brush to spread a bit if sauce on the wrap. I find I actually use less sauce and it’s spread more evenly. It also goes less soggy. Then some shredded chicken, a generous handful of chopped romaine lettuce and a sprinkle of shredded cheese. I added a bit of bacon to their side salad, not the wrap though. I split one rasher between them. They were both very excited for lunch time when the left but I’m guessing that was the Barny cake 😂

Mince beef and onions with butter mash and spinach recipe

Recipe - So this month has been HARD but the end is near.  I've signed a new contact at work, going from weekly pay to monthly pay, I've had a large amount to pay out to secure a new property and enrolled onto my nursing degree. With the bare minimum moneyed 4 kids it has been a struggle, but I have managed to make do, not beg steal or borrow and make meals from next to nothing due to raiding the kitchen.  Today was mince beef and onions with butter mash and spinach. I cannot wait to get my chops around a T bone steak!

Friday night tea for the kids! Pizza baguette, popcorn, rice krispie squares

Super easy Friday night tea for the kids - Aka the day before shopping order arrives 😅. Pizza baguette. (The usual puree, ketchup, herbs and cheese etc)  and some veg. Eldest wanted to make popcorn  but we were out of oil...so after a quick  rummage through the baking cupboard rice krispie squares it was! Couple of packs of mini marshmallows, some butter and around 200g rice krispies. I used the asda version. Even found some left over sprinkles from her birthday cake for decoration. Could've used a little more marshmallow tbh...but somebody kept eating them! Reckon 2 WHOLE packs  would be fine😅.

ASDA essentials line! fruit/milk/bread/veg, my saving experience!

So my last couple shops at Aldi have been coming up much more expensive than I’m used to. I’ve seen people posting about the ASDA essentials line and that their produce is much better (and I do find out Aldi fruit has been going off faster than the kids eat it far too often). I decided to give it a go. I ordered a big shop for our family of 6. Delivery included it was £122.54.  I searched Asda essentials on the app and did as much of my shop with those items as I could, then filled the rest with other Asda brand items and multi buy offers. I’m actually quite impressed with how much I got! This will do most of what we need for a couple weeks other than a restock on fresh items such as fruit/milk/bread/veg. My sister aslo noticed how aldi fruit and veg seems to go off after a day or two at home. Their quality has gone down hill. My view. And I agree its gotten much more expensive. Think my next shop will also be asda x.

Grow your own vegetables! cucumbers, courgettes, tomatoes, lettuce and green beans

I would really recommend that people grow there own veg. I have a small front garden. This year I planted from seed some vegetables with my 6 year old Grandaughter quite late in the year. I am no gardener. I also bought some reduced price tomato plants and nursed them back to health. So far we've had some cucumbers, courgettes, a bumper crop of tomatoes, lettuce and green beans. I also got a basil plant from the Foodbank and split it up and rerooted the cuttings in a cup of water on the kitchen windowsill. We now have 8 thriving plants. We also grew some potatoes in pots. We've eaten two lots and another is almost ready. It's been a learning experience for my Grandaughter and we've had lovely fresh veg.

Quick roast for a Monday night! chicken gravy made from a summer roast recipe

Recipe -  This was supposed to be yesterdays dinner but life happens, so a quick roast for a Monday night! Quick because I froze some chicken in gravy a while ago and separately froze some chicken gravy made from a summer roast - reheated in a dish covered in gravy and foil to make sure it didn’t dry out. Plus potatoes, cauliflower cheese, greens and Yorkies which were ‘interesting’ due to a power cut (3rd in 5 days) half way through but still delicious. We’re too full at the mo for pudding made from some frozen filo pastry, apple sauce, and an Xmas pudding found in the back of our cupboard and well beyond its BB date!

Homemade custard bramley apples! mixed plain flour with butter, sugar and cinnamon

Our school was giving away some bramley apples, so it only meant one of two things! (other option was apple pie but I wanted something quickish). The custard is completely homemade, as I didn't have any birds or instant in.. my first time making it and I didn't have any cornflour in so had to try and thicken it without haha I didn't use measurements as I eyeballed it but for the crumble filling I peeled and sliced up an apple, sprinkled some sugar and cinnamon on it. the topping I mixed plain flour with butter, sugar and a bit more cinnamon.. the custard I used 350ml milk, 3 egg yolks, sugar and vanilla extract.. you're best off looking up the technique for that as there are so many different recipes x all in all not bad for a free pudding!

School lunch season! expensive chicken and bacon layered pasta from Aldi

School lunch season again! My family loves the chicken and bacon layered pasta from Aldi but it gets so expensive buying premade lunch options and I don’t know 100% what goes into them. So I’ve made it myself. So much cheaper and I know exactly what my kids are eating. Pasta, sweet corn (I used frozen and just added it for the last few minutes the pasta was cooking, then rinsed it all with cold water when it was done), cucumber, chicken, bacon, lettuce and shredded carrot. The dressing is equal parts mayo and sour cream with a pinch of salt, pepper and a generous amount of paprika. My kids are big eaters so pasta is a great option to attempt to fill them up 😂 I also have them crackers, some ham and cheese, carrots and cucumbers with a pot of ranch dip, fruit and a pot of yoghurt and a mini chocolate chip muffin.

This should of cost just over £20..🙃 but I only paid £4.75..😉 Result...🙌 Well this brought a smile to my face....  Its (Bean🤣) ages since we had traditional baked beans...since the increase of upto £1.20 a can we couldn't afford to buy them..😡 I just nipped locally & the lady at the shop offered them me. We’ve cut out restaurants to save money. But I still wanted to have nice looking food and “date” nights with the hubby. So I went to B&M and work our nice meals into our regular shopping budget. We shop at Aldi and spend 90-140 a week for a family of 6 and this includes nappies for 2, overnight pants for 1, soaps, cleaners, etc. I do a lot homemade and for the size of our family and the kids appetites I think it’s pretty good. I got the platters for £4 each, chip baskets for £1.49 each and the little bowls were £5 for 3 with a slate.
