EASY PASTA SALAD WITH DIJON DRESSING
3 cups uncooked curly pasta
1 red onion, finely diced, with a dash of salt and vinegar.
1 each green, yellow and red pepper, finely diced
2 carrots finely diced
2 celery sticks, stringed and diced
2 spring onions, finely sliced
3/4 cup of mayonnaise
2 tblspns white vinegar
1 tblspn garlic powder
2 tblspns white sugar
2 tspns Dijon mayonnaise
Cook pasta to al dente, drain and allow to cool.
Prep vegetable and combine.
Mix dressing ingredients.
Pour over pasta and toss to combine.
Add vegetables and stir through until well coated.
Refrigerate for at least 1 hr before serving to allow flavours to infuse.
