ALL BRAN FRUITED MUFFINS RECIPE! container with Kellogs All Bran

Looking through the cupboard I came across a container with Kellogs All Bran. Checking mam's recipes I found one that fit.....

Starting the night before.......
150gm Kellog's ALL Bran
350 ml milk
Pour the milk over the ALL Bran in a bowl and cover with a plate..
Pop in the fridge overnight.
200gm Sultanas
100ml spirit, (Rum, Brandy, Sherry)
Pour liquid over Sultanas in a bowl and cover with a plate.
Pop in the fridge overnight.
Preheat oven to 180⁰C
150gm Self Raising flour
150gm Caster sugar
2 lge eggs
Crack eggs into a bowl containing the flour and sugar.
Beat together.
Add the soaked ALL Bran.
Beat together.

Add the soaked Sultanas reserving any liquid. In the bowl for later.
Fold and stir together until combined.
Divide amongst 12 muffin cases in a tray.

Bake on middle shelf for 25-30 minutes until risen and give a little when lightly pressed with forefinger.
Remove from oven and let stand for 5 minutes.
Transfer to a wire rack.

If desired brush the tops with the reserved liquid the Sultanas liquid residue.
