I had leftover chips in the fridge and needed a quick meal tonight as I was going out to a meeting. I had some cooked Frikadellen burgers in the freezer - warmed them up with the chips and a tin of tomatoes. Quickly made a batch of lemon & sultana muffins to take to the meeting - used a tired looking lemon from the fridge. Muffins are so quick and cheap to make and you can use up a lemon or orange or use flavours/dried fruit/desiccated coconut. Muffins are best eaten fresh but can be pinged in mw next day to have as a pudding with custard or ice cream.
