Recipe - I was given 2kg of wonky strawberries in my latest community pantry visit. There was no way our family would get through all that so I froze them immediately to allow time to decide what to do.
Yesterday was jam making day! It’s so easy and means that I’ve now got 4 jars of jam from 1kg of strawberries 🍓.
You can buy 1kg of jam sugar for £1 from most supermarkets, I got mine from B&M.
Put 2 flasks in the freezer. Transfer the strawberry mixture to a preserving pan with the lemon juice. Place on a low heat and cook very gently. If sugar remains on the sides of the pan, dip a pastry brush in hot water and brush the sugar. When you no longer feel that there are any sugar grains left, increase the heat to start bubbling the jam and bring it to a boil. Add a tablespoon of butter, if desired, to the finished jam and stir in to melt.
