Recipe - Nigel slaters Chicken and leek pie.
Had roast chicken on Sunday, there's only 3 of us and my daughter doesn't like roast chicken??? so there's always loads left over from an ex large chicken. I know most people wouldn't have any leftovers but you could use any chicken.
- Leftover chicken
- 2 sheets of puff pastry
- Dried herbs
Cook bacon and chicken in a pan for a few minutes, then added the some herbs and then the flour and milk. Daughter doesn't like leeks so I didn't add them, but it will bulk it out if you do. Added some mustard and popped it on one of the sheets of pastry and then popped the other one on top. Cooked it at 180f till you think it's brown enough. I've used a ruler and cut it in to 9 pieces but they are large so you could make them smaller. this will do 3 meals for us.
You can use anything really chicken and mushrooms or chicken and brocoli, it's so easy to make if you use left overs.
