Recipe - Bubble n Squeak patties for dinner and served with bacon as recipe.
I used up leftover mash carrots and cabbage from Sunday dinner.
HOMEMADE BUBBLE N SQUEAK PATTIES
450g potatoes, peeled and cut into chunks
180g cabbage, finely chopped
1 carrot, grated
1 onion, finely chopped
1 teaspoon English mustard
50g mature Cheddar cheese, grated
salt and pepper to taste
Boil potatoes until tender enough to pierce with a fork.
Drain and mash potatoes, then set aside.
Combine cabbage and carrot in a pan with and just enough water to barely cover the bottom of the pan.
Cook for 5 minutes.
Drain off liquid and stir into the mashed potatoes along with the onion, mustard and Cheddar cheese.
Season with salt and pepper.
Use a burger press if you have one.
Shape the mixture into 4 round cakes.
Heat an oiled frying pan over medium-high heat.
Place the rounds on the pan and cook for 5 minutes, until heated through and golden brown.
Flip and cook other side for another 5 minutes.
Serve with crispy fried bacon.
