Healthy Baked Onion Bhajis Recipe, Serve hot with Red Chilli Jam

Recipe - To go with the Red Chilli jam, for teatime later, I've made some Onion Bhajis not fried, baked, my nod towards slimming.......🤭.

HEALTHY BAKED ONION BHAJIS

3 lge onions, peeled, cut in half lengthways and sliced not too thick

1/2 tsp ground turmeric
1/2 tsp ground coriander
1/4 tsp ground cumin
1/4 tsp ground ginger
1/4 tsp chilli powder

6 tbsp Gram flour (chickpea)
1 pinch salt
1/2 tsp ground cumin
1/2 tsp ground coriander
1 tbsp tomato puree
water, as needed

Vegetable oil, as needed

Preheat the oven to 200° C
Line a large baking tray with baking parchment.
Drizzle some oil into frying pan.
Gently fry the onions for about 6-8 minutes.
Add the turmeric, cumin, ginger, coriander, chilli and stir well.

Remove from the heat.

Place the Gram flour, salt, coriander, cumin into a bowl and mix well.
Add the onions and tomato puree and mix.
Add a little bit of water to the mix, it should be not too stiff but not sloppy.
Drizzle some oil onto the parchment lined tray.
Wet your hands and scoup enough of the onion mix and roll into a golf ball sized ball.
Pop onto the tray, flatten slightly with the back of a fork.
Bake on the middle shelf of the oven for 25 minutes.

Drizzle a little oil on top of the bhajis and bake for an additional 25 minutes or until golden brown.
Serve hot, with red chilli jam......enjoy!
