Homemade Ramen Noodles Recipe! flour "crumbs", bicarbonate of soda, pasta machine

HOMEMADE RAMEN NOODLES
240 grams Strong plain flour
2 tsps bicarbonate of soda
125 ml warm water

Add bicarbonate of soda to the warm water and mix well to make an alkaline solution.
Place flour in a large bowl and pour in the alkaline solution, it will immediately turn a yellowish.
Use a blunt knife to mix in the water until it is all incorporated into the flour.
Gather the flour "crumbs" together into a ball.
Wrap the dough in plastic bag and leave to rest for 30 mins at room temperature.
Knead for 2-3 mins.

Divide your dough in half and return the unused portion to a plastic bag.
Roll the other half of your dough as much as possible by hand until you have 5mm thickness.
It will look raggedy and rough.

Pass it through the pasta machine on widest setting.
Repeat 5 or 6 more times, folding in half each time.
Adjust the pasta machine to the next smaller size setting and pass the dough through the rollers once but remember DO NOT FOLD.

Dust dough with a little flour to prevent any possible sticking.
Continue rolling and adjusting to the next setting, taking your sheet to 2mm thickness.
If your flattened dough is too long, cut it in half.
Lightly dust the dough with flour and then pass it through the spaghetti cutters.
Dust the noodles in flour and toss lightly to separate.
Bring a large pot of water to boil.

Then add the noodles and cook for 1 minute.
Drain and rinse under cold water.
