STICKY TOFFEE MUFFINS RECIPE! tops with warmed Maple syrup for sticky glaze

Looking through my food store cupboard I came across a box of Eat Me Pitted Dates. Still in tact seal, no signs of mould, no bad smell.

What to make??
STICKY TOFFEE MUFFINS RECIPE
Weigh out 3 large eggs into a bowl. (180g)
Match weigh
Self raising flour.
Brown sugar.
Soft butter
Dates.

Preheat oven to 180⁰C 

Place all but dates in a roomy bowl and beat to a soft mixture.
Chop up small the Dates, (minced mine)
Add to mixture and using a soft spatula combine.
Line a 12 hole deep muffin tray with muffin cases.
Divide the mixture amongst the 12 muffin cases. ( I used an ice cream scoup each case got approx 75g or 2/3rds full.
Bake on middle shelf for 26 minutes.
Leave in the tin for 5 minutes. 

Remove and cool on a wire rack.

I like to brush the tops with warmed Maple syrup to give a sticky glaze).
