Instructions:

  1. Peel and chop the potatoes into bite-sized chunks.
  2. If using fresh carrots, peel and slice them. If using tinned carrots, drain and set aside.
  3. Chop the onion and, if desired, the swede.
  4. In a large pot, combine the diced beef, chopped potatoes, carrots, onion, and swede (if using).
  5. Dissolve beef stock cubes in hot water and pour the broth over the ingredients in the pot until they are just covered.
  6. Season with salt, pepper, and any additional seasonings you prefer.
  7. Bring the pot to a boil and then reduce the heat to a simmer. Let it cook until the vegetables are tender and the beef is cooked through.
  8. Taste and adjust the seasoning if needed.
  9. Serve the Scouse hot with slices of crusty bread.
