Recipe - So the roast pork shank turned into roast chicken… I couldnt get the knife through the pork, too much bone etc 🙈 so thats bagged up in the freezer to slow cook next week at some point, & used some leftover chicken & stuffing instead, heated through in the gravy made from the pork juices. Served with carrots (& an onion for me!), broccoli, roast potatoes cooked in pork dripping, & sage & onion Yorkshire puddings 😋.
