A delightful twist on the classic Chicken & Bacon Caesar Salad, paired with potato pops for a satisfying and family-friendly meal. This dish received rave reviews from the kids last time, so we decided to switch it up a bit this time, and the creativity continues to flow for future variations!
Ingredients:
- Chicken fillet slices, £0.50 (Company shop)
- 1/2 pack of bacon, £0.70
- Lettuce, £0.70
- Cherry tomatoes, free from Olio
- Bread for croutons, free from Olio
- Manchego cheese, free from Olio
- 1/2 bottle of Caesar dressing, £1 (I don't like the cheaper ones but am going to try & make my own next time!)
- Potato pops, £1
- Quorn cocktail sausages, free from Olio
Total Cost: £3.90
Instructions:
- Cook the chicken fillet slices and bacon until they're golden and crispy.
- Prepare a bed of fresh lettuce on serving plates.
- Slice cherry tomatoes and scatter them over the lettuce.
- Make homemade croutons from the free bread, toasting them to perfection.
- Grate or thinly slice Manchego cheese and sprinkle it over the salad.
- Arrange the cooked chicken and bacon on top.
- Drizzle Caesar dressing generously over the salad.
- Serve with a side of potato pops and Quorn cocktail sausages for the kids.
